Northern burger swagger with a drinks list to match
Fat Hippo Liverpool is not a place you visit for the patty alone. The room sits in the Ropewalks, a couple of minutes from Liverpool Central, and it runs to the rhythm of an evening rather than a lunch break — hard shakes and cocktails arrive before, during and after the food. The chain is independent and northern by design, and this branch behaves like the neighbourhood it landed in: loud, unfussy and built for the second stop of a night out rather than a quiet dinner.
The Concept · The Story
Fat Hippo started in 2010 in a small end-terrace in Jesmond, Newcastle, from a business plan founder Mike Phillips wrote while still at university. A taste for odd buildings shaped what came next: in 2013 the company opened Fat Hippo Underground inside a listed former bank vault under Newcastle city centre. Liverpool arrived in 2021, ahead of Cardiff, Birmingham, Glasgow, York and a Soho flagship in 2024. The motto is the whole brief — «Good food. Messy fingers. Juicy burgers.» — and a rolling Burger Lab keeps limited-run specials moving through the menu.
What to Order
The house benchmark is the Born Slippy: double beef patty, American cheese, garlic butter mayo, braised pork rib meat, jalapeños and hot honey. The Swiss Tony is the quieter, more grown-up option — double patty, Swiss cheese, smoked bacon, mushrooms, Cajun onion strings and truffle mayo — while the PB+JJ, beef under chunky peanut butter, bacon jam and smoked chilli jello, is the one people order out of curiosity. Plant-based eaters get a real range: the Notorious VFC 2.0, southern-fried plant chkn loaded with Cajun tater tots, vegan cheese and zinger mayo, and the Five Lies. Open with Freddie’s Fingers or beer-battered cheese balls, upgrade the side to dirty fries, finish with an ice cream cookie sandwich.
The Space
Exposed brick, metal ductwork tracked across the ceiling and deep booths give the room the swagger of a West Village burger joint, with low ambient lighting and a well-chosen soundtrack doing the rest. Out front there is a covered, heated terrace — one of the better people-watching perches in the Ropewalks, and genuinely usable in Liverpool weather. Booths take groups, the bar side takes pairs, and the drinks do real work here: hard shakes such as Butterbeer, built on Bailey’s, butterscotch and vanilla ice cream, next to a Cherry Negroni, an Espresso Shortini and the house Hillbilly Lager.

Do I need to book? For Friday and Saturday evenings, yes — the booths go first and the room fills early.
